First up, one of my all time favourite sandwiches. I got the taste for giardiniera when I changed jobs and started frequenting a local sandwich chain that did something similar to this one. At first I ordered this sandwich because I thought it was similar to the Subway BMT, but I soon realised that it had something different: the crunchy tangy goodness of assorted pickled vegetables.
After a few weeks of ordering this for lunch on a pretty regular basis the guy that runs the place took me aside and said he had some bad news for me. He then proceeded to tell me that aside from him, I was the only person in Adelaide who ever ordered this particular sandwich, and that he would regrettably be removing it from the menu.
I feared this was the end, but by pure chance as I was doing my grocery shopping later that week I saw a jar of Hoyt's Giardiniera on the shelf in front of me. The key ingredient now secured, my lunch later that day was as follows:
Crusty baguette
Hot sopressa or salami
Ham
Tasty cheddar cheese
Cherry tomatoes
JalapeƱos
Giardiniera (picked onions, cauliflower, carrots, baby cucumber & olives)
Habanero & mango chilli sauce

A slightly different result from Stax, but it did the business.
